Recipe - Avocado Chicken Salad

So when the weather is crappy outside this is one of our favorite dishes to make. We make a big deal out of having a picnic on the living room floor, all sitting down together, really doing something different and fun. This tradition started two years ago in the middle of January. It was cold and gloomy; we wanted something to boost our spirits on one of the coldest nights of the season thus far. So we came up with this recipe, adapted from some recipe I had found on Pinterest. So without further ado I give you the Avocado Chicken Salad recipe.

Ingredients:
4 avocados
1 sweet pepper (red, yellow, or green)
1/2 red onion
1 tomato
cilantro
Lemon juice (to taste)
California Garlic Salt (to taste)
2 chicken breasts (chopped)
Lime juice

Homemade Pita chips:
Pita Pockets
Olive oil
Garlic salt

Start with mashing up the avocado with a fork…
Mix in your peppers, red onion, tomato, and cilantro. 
Add lemon juice and garlic salt, put it in the fridge to chill.
Chop up your chicken add garlic salt, cilantro, and lime juice.
Once cooked, add this to the cooled avocado mixture,
and place back in the fridge. It should chill about an hour.
While your mix is chilling, start to cut up your pita pockets.  
Cut into 1/4's and spread on a cookie sheet, add Olive oil, and garlic salt.
Broil on low for 5-7 minutes, or until golden brown.

from year to year I assure you. That's a good thing!
